BAKED POTATO SLICES
Preheat oven to 400 degrees
Brush both side of potato slices with butter; place them on an
ungreased cookie sheet. Bake in the preheated 400 degrees oven for 30 to
40 minutes or until lightly browned on both sides, turning once.
When potatoes are ready, top with bacon, cheese, and green onion; continue baking until the cheese has melted!

new recipe to try
Potato-Mushroom Smothered Pork Chops
Yield – 8 servingsPreparation Time – 30 minutes
Cooking Time – 30 minutes
Ingredients
- 2 lbs. baby red potatoes (about 16), quartered ($1)
- 1 Tbsp olive oil ($.05)
- 8 oz. sliced mushrooms ($1)
- 1 small white or yellow onion, chopped ($.20)
- Salt and pepper
- About 3 Tbsp butter or margarine ($.10)
- About 1/4 cup milk or sour cream or cream cheese ($.25)
- 8 pork chops ($3.51)
- Salt and pepper
- Broccoli or other vegetable side ($1)
Directions
- Boil the quartered red potatoes. (I left the skins on because I was feeling lazy…and small red potatoes are tough to peel.)
- Saute the mushrooms and onions in the olive oil in a large skillet for 10 to 15 minutes, over medium heat.
- Preheat the oven to 350.
- Once the potatoes are done, drain and add to bowl and mash with the butter, milk or sour cream or cream cheese (whatever you like to use to make mashed potatoes.) Gently fold in the sauteed mushrooms and onions. Season with salt and pepper.
- Place the pork chops into an 9×13 baking dish and sprinkle salt and pepper over the top. Top with the potato-mushroom mixture.
- Bake in the preheated oven for 30 minutes, or until pork chops have cooked through.
- Prepare the broccoli or other vegetable.
- Serve Potato-Mushroom Smothered Pork Chops with side of veggies.

crash hot potatoes
cheers to the pioneer woman! her crash hot potatoes were amazing!!! i made them with steaks, roasted broccoli, and a side of bread. YUMMY!!!!
- 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 Tablespoons Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste
- Rosemary (or Other Herbs Of Choice) To Taste
Preparation Instructions
Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

Gourmet sure does Taste Good.......
......especially when someone else makes it :)
i have been doing all of our cooking around here for the past few weeks and i guess josh decided it was time to show us what he can do :) last night he made an incredible gourmet supper for us!
he started by marinading ribeyes (not sure what he used....secret) and then he grilled them over hot natura briquette charcoal. they were perfection already but then he suggested we get out the blue cheese we bought that afternoon at the amish cheese store.......which was not like "store bought" blue cheese--instead, it is silky and intense! a dab of that on top of the already awesome steak and i was in food heaven!!! he also made baked potatoes on the grill--he has this really cool potato stand that we have never used before--it has prongs that go up in the potatoes so the heat gets right up inside. we rubbed the potatoes with fustini tuscan olive oil and liberally doused them with kosher salt. the end result was AMAZING--so hot and fluffy on the inside yet super crunchy and tasty on the outside! along the side we served fresh blueberries, strawberries and nectarine slices! mmmmmmmmmmmmmm
