not falling apart

i am not falling apart. i am not falling apart. i am not falling apart.

repeating this will help me..... sigh. perfect trifecta. tough day already--5th anniversary of tom's death. then josh woke up feeling yucky with a stomach ache. i of course then felt shitty the rest of the day--mostly in my head..... then out of the blue jack tells me about a kid who puked at school.... and then at religious education tonight, while they were ending the rosary, a kid puked up on the alter :( BLEH!!!

death. stress. stomach stuff. puke.

i have taken about 27 deep breaths. just trying to relax. i am supposed to get together with my family tomorrow (taking a personal day) to be together and here i sit worrying a lot about puke. will the boys puke? will josh puke? will i get it? if we don't get it now.... will we get it later? tomorrow? next day? AUGHHHHH.

i've made such progress. i assume i am struggling more today than other days because of my already heightened feelings.....

i hope tomorrow i breath a bit easier.

Ingredients:

  • 2 pound boneless pork shoulder roast (sirloin roast)
  • kosher salt, to taste
  • 1/2 tsp garlic powder
  • ½ teaspoon red pepper flakes
  • 1/3 cup chicken or vegetable broth
  • 1/3 cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey
Directions:



Season the pork with salt, garlic powder and red pepper flakes and place it into the slow cooker. Mix together the broth and vinegar and pour it over the pork, then pour the honey over and set the timer for 4 hours on High or 6-8 hours on Low.



Once the pork is cooked and tender (it should shred easily with a fork), remove from slow cooker with tongs into a serving dish. Break apart lightly with two forks and put back into the slow cooker and ladle 1/2 cup sauce over the pork and keep warm until ready to eat.
