weekly plan

 s: roasted pork tenderloin, pear blue cheese kale salad, baked potatoes, green beans, herbed rolls

m: skinny baked chicken parm, spaghetti, romaine parmesan salad 

t: dr.pepper pork roast sliders, cole slaw, marinated tomatoes, roasted potatoes

w: baboli pizzas (leftover dr.pepper roast bbq with jalapeno and red onions/pepperoni and bacon), chips, carrots 

r: rice krispy chicken, green beans, roasted broccoli, baked potatoes

f: unsure :) 

ROASTED PORK

NEED:
1 Pork Tenderloin
a few cloves of garlic
Rosemary (fresh or dried)
Balsamic Vinegar 2-3 T
Olive Oil 2-3 T
Salt/Pepper

DO:
make small slits into the pork and push a garlic clove into each one (more garlic means you love it more) :)
rub the roast with balsamic vinegar and then oil. Sprinkle with Salt and Pepper. Rub/Pat with rosemary.

place on cookie sheet that is covered with foil. roast in the oven at 500 degrees. Smaller roasts (1 lb) will take 20 minutes or so. Bigger ones take more (40, etc). check temp with a meat thermometer--165 degrees min.

COLESLAW

1 bag slaw mix (small)
mayo
sour cream
apple cider vinegar
beaumounde seasoning
salt
pepper
sugar
dried green chives  

mix. store in fridge to marinade and serve. 

Skinny Chicken Parmesan
Ingredients
  • Cooking spray or oil mister
  • 3 boneless, skinless chicken breasts (8 ounces each), fat trimmed
  • 3⁄4 teaspoon kosher salt
  • 1⁄2 cup seasoned whole wheat bread crumbs, homemade (see page 110) or store-bought
  • 3 tablespoons grated Parmesan cheese
  • 2 teaspoons melted unsalted butter
  • 1 tablespoon olive oil
  • 2 cups Quickest Marinara Sauce (page 94) or store-bought marinara sauce
  • 9 tablespoons part-skim mozzarella cheese
Directions
Preheat the oven to 450°F. Lightly spray a large baking sheet with oil.
Slice the chicken breasts in half horizontally to make 6 cutlets. Season both sides with salt.
In a shallow bowl, combine the bread crumbs and Parmesan. In a small bowl, combine the butter and olive oil. Brush the butter and oil on both sides of the chicken, dredge the chicken in the bread crumb mixture, and put the chicken on the prepared baking sheet. Lightly spray oil on top of the chicken.
Bake until golden on the bottom, about 20 minutes. Turn the chicken over and bake until the center is cooked through and the bottom is golden, 5 to 6 minutes.
Meanwhile, in a large, deep covered skillet, cook the marinara sauce over medium heat until heated through, 2 to 3 minutes.
Place the baked chicken in the skillet and top each piece with 11⁄2 tablespoons of themozzarella. Cover the pan and cook until the cheese melts, 3 to 4 minutes. Serve hot.

frozen roll dough--thawed (overnight or all day)
melted butter
italian seasoning

do:
cut dough into halves or quarters
dip into hot butter mixed with herbs
layer in a greased bundt cake pan
let raise for 45-60 minutes (covered with a towel)
bake 30-45 minutes 350-375 degrees


Recipes

Turkey not sure how big my turkey will be yet so I might have to adjust times above.... but no matter how big it is, I will rub with sage then butter (under the skin too) and then sprinkle with salt and pepper. In the neck cavity I place a few sage leaves, lemon slices and green apple. I also stuff the turkey (stuffing below) before placing it in a turkey cooking bag. The cooking bag leaves the turkey SUPER moist! 

Stuffing
diced bread that has been "crusted" up (good bread is best...sour dough, french, etc)--I have been freezing mine for a few months all torn up as I came to the end of loaves...just gotta get it out now :) 
bag or two of pepperidge farm coutons
chopped celery
chopped onion
butter
sage
thyme
salt
pepper
broth
chopped green apple
2 eggs beaten

Saute the celery, and onion in butter. Add to the bread cubes and croutons, salt, pepper, and herbs. Toss with your hands. Add apple. Then add eggs, mix with hands. Now add broth, a bit at a time, until it is moist but not too wet. Place in a baking pan or stuff your turkey. I do both.

Gravy
Made with drippings from the turkey, broth, tad bit of kitchen bouquet and cornstarch thickener 

Sweet Potato Souffle BEST SWEET POTATOES EVER!!
Beat together: 3 cups cooked mashed sweet potatoes, 1 cup sugar, 1/2 cup evaporated milk, 2 eggs, 1 tsp vanilla, 1/2 tsp salt, 1 stick butter.

Put in a greased cassarole dish.

Topping: mix together and put on top of sweet potato mix.  1 cup chopped pecans, 1 cup brown sugar, 1 stick butter, 1/3 cup flour, 1/2 tsp cinnamon.

Bake 350 for 30 min or until knife comes out clean.

  I will use Yukons....and then mash them BY HAND (the only way to go) with half and half that is simmered with garlic and melted butter

menu for the week.... kind of ;0

saturday: date night at chipotle

sunday: supposed to be broasted chicken but i lost it in the van....cereal ;)

monday: roast, rice, gravy, peas, yummy herbed rolls

tuesday: pan cooked chicken (marinaded in italian dressing), white rice (leftover), leftover rolls and peas again

wednesday: mom has appt so breakfast or chicken nuggets/patties

thursday: v-day--out after boys' haircuts

friday: boys gone

saturday: out for lj's bday

sunday: boys with grandma--make your own

monday............. TBD :)

recipes

i typed these up for a friend so i figured i should post as well :) i have posted the second two previously but not the amazing pork one! enjoy.

NEED:
1 Pork Tenderloin
a few cloves of garlic
Rosemary (fresh or dried)
Balsamic Vinegar 2-3 T
Olive Oil 2-3 T
Salt/Pepper

DO:
make small slits into the pork and push a garlic clove into each one (more garlic means you love it more) :)
rub the roast with balsamic vinegar and then oil. Sprinkle with Salt and Pepper. Rub/Pat with rosemary.

Enjoy :) I serve with garlic smashed potatoes and herbed rolls (recipes below.... :) ) and a vegetable

NEED:
red skin potatoes
fat free half and half
garlic cloves
salt

DO:
simmer garlic in 1/2 1/2 until garlic is soft (20 minutes or so) but watch it carefully so the liquid does not scorch
meanwhile, cut the potatoes into quarters and boil with salt until mashable. drain and add to a bowl while hot.
add half and half a little at a time to the potatoes. make sure to add the garlic and mash to your desired consistency. add salt to taste.  they have a wonderful creamy texture!

need:
frozen roll dough--thawed (overnight or all day)
melted butter
italian seasoning

do:
cut dough into halves or quarters
dip into hot butter mixed with herbs
layer in a greased bundt cake pan
let raise for 45-60 minutes (covered with a towel)
bake 30-45 minutes 350-375 degrees

Grandma Johnson's Deviled Eggs
12 egg yolks
4 T mayo
2 tsp vinnegar
1 tsp salt
dash pepper
1/2 tsp paprika
1 tsp dry mustard OR 2 tsp prepared mustard

mix and refill egg whites

pure awesomeness for a meal

mmmmmmmmmmmmmmmm i love when my hubby makes ribs! they are fabulous! he started them at 9 am this morning for our 5:30 meal and they were awesome!  in addition, i created a broccoli slaw that was tasty too. (recipe below).

saturday: out for prom and a bday party
sunday: ribs, broccoli slaw, fresh fruit, herbed rolls (recipe below), baked potatoes, and ice cream sundaes
monday: garlic shrimp linguine, bread, broccoli
tuesday: warmed sandwiches, chips and fruit
wednesday--date with josh?
thursday: popcorn shrimp, fries and sweet potato fries, fruit
friday:chicken stir fry, homemade baked egg rolls, rice
saturday: blue cheese burgers
sunday: grilled cast iron skillet fajitas?

herbed rolls
need:
frozen roll dough--thawed (overnight or all day)
melted butter
italian seasoning

do:
cut dough into halves or quarters
dip into hot butter mixed with herbs
layer in a greased bundt cake pan
let raise for 45-60 minutes (covered with a towel)
bake 30-45 minutes 350-375 degrees

broccoli slaw
need:
bag(s) of broccoli slaw
ramen noodles and packet of seasoning
slivered almonds
garlic salt 
butter
red wine vinnegar
apple cider vinnegar
brown sugar
soy sauce
canola oil


brown the crumbled ramen noodles, almonds, garlic salt and sesame seeds in the butter in skillet. cool on paper towel and set aside.

wisk the vinnegars (about 1/4 cup each), brown sugar (1-2 tsp or so), soy sauce (1/4 cup?) and canola oil. toss with broccoli slaw. let sit.

right before serving, toss with the crunchy mix!
ENJOY :) (oh and i added chopped apples to the slaw on my plate...mmmmm)



Grilled cast iron skillet fajitas
NEED:

Chicken Breasts--Boneless/Skinless 
Peppers
Onions
Tomatoes 
Jalepeno (optional) 
olive oil
grapefruit juice 
lime juice (i squeezed fresh limes) 
black pepper (fresh ground is best)
oregeno (i used italian blend) 
garlic powder 
salt (i used kosher) 
chilli powder
cumin 
tortillas 

DO: 
mix together in a big zip lock bag:
olive oil
grapefruit juice  (about a half a small can full)
lime juice (i squeezed fresh limes--2 of them) 
black pepper (fresh ground is best)--i used quite a bit
oregeno (i used italian blend)--about 1 T
garlic powder about 1 T
salt (i used kosher) about 1.5 tsp
chilli powder 1-2 T
cumin- 1-2 T 
add chicken to bag and let marinade up to 5 hours--i had an hour so that is what i did

toss the veggies (minus tomatoes) with cumin, chilli powder, salt and pepper. let them sit on a board all ready to go 

put tomatoes in a bowl so they are ready to go (1/4 to 1/8 of tomato chunks) 

put some oil in a cup/small bowl so it is ready to go 

preheat grill--turn one side to HOT and put cast iron skillet on this side. turn the other side to med-med high.
grill chicken breasts whole until BARELY cooked through on this side. when chicken has a few minutes to go, quickly dump the oil into the hot skillet and then throw peppers and onions in. Let "blacken" while you cut chicken on the bias. Add chicken to the pepper mixture in the skillet and let the juices all mix. when the veggies are almost to the texture/consistency you want, add the tomatoes and let sear.  the skillet is hot so i put all the mix into a bowl to bring inside.
