weekly menu
been a while since i blogged my menu....yes i have still been planning, just not posting it here!
sunday: ordered pizza
monday: warmed sandwiches (recipe below), chips, steamed broccoli
tuesday: turkey kielbasa, wild rice, and tomato/basil/fresh mozzarella salads
wednesday: tacos, black beans
thursday: breaded chicken over salads (and french fries for the boys)
friday: grilled jerk marinaded shrimp skewers, sweet potato french fries, fruit salad
saturday: beef roast, homemade mashed potatoes with gravy, corn, peas, bread
warmed sandwiches:
NEED:
small buns (i am going to use potato buns)
deli meats (i am using ham, and roast beef)
cheese slices (i am using colby jack and cheddar)
mayo, mustard, red onion (optional to taste)
melted butter
poppyseeds, sesame seeds, garlic salt (all optional to taste)
DO:
make small sandwiches from the ingredients--i make them "special" for each family member based on what they like....no cheese for luke, colby jack for jack, etc. brush the tops of the buns with melted butter. sprinkle with seeds/garlic salt. place on a baking sheet and cover with foil. bake 20 minutes at 350 or until hot and melty. tasty! (i make mine the night before and just pop them in the oven--this is one of my go-to dinners on staff meeting monday nights like tomorrow)

Menu for the Week with Recipes
Saturday: Homemade Pizza (use kitchen aid mixer recipe) with mushrooms, red onion, fire roasted tomatoes, etc. and a Salad with pecans, green onions, strawberries, and mandarin oranges and poppy seed dressing
Sunday: Pork Tenderloin on the Grill (balsamic and garlic), Steamed Broccoli and Baked Potatoes on Grill
Memorial Day Monday: Farm for Picnic (make the chicken and rice for tuesday)
Tuesday: Softball Night so we need a "fast supper" tacos (salad), cilantro rice (make rice on Monday and Chicken too) , Black beans (prep Wednesday's dinner)
Wednesday: T-Ball and TB Dentist so quick supper needed--warmed sandwiches, Fruit salad, Chips
Thursday: Not sure yet :) I have Graduation in Sparta
Friday: Basil Shrimp with Feta and Orzo (new recipe--hope it is GREAT) , Garlic bread
Saturday: Marinaded Round Steak grilled, Marinated tomatoes (new recipe too) and Wild Rice
Sunday: Not sure yet :)
Warmed Sandwiches--This is a modified recipe from
NEED:
Yummy SMALL potato buns (or something similar)
Lunch Meat of your choice--I use ham for the boys but for Josh and I rare roast beef and Red Peppered Turkey breast slices are fantastic!
Thin Sliced Cheese (I use havarti, cheddar or colby jack)
Mayo, Mustard, or both
thin sliced Red Onion (optional)
Melted butter
Poppy Seeds
DO:
Put the mayo, mustard or both on one half of each bun
Add meat and cheese, and red onion if you are using them
Put sandwich together on a baking sheet
Brush tops with melted butter and sprinkle with poppy seeds
Cover entire pan with foil
Bake in preheated oven (350) until Cheese melts and Sandwiches are warm (15 minutes?)

Menu for the Week
Here is my menu for the week :) I am trying two new recipes this week.... Friday and Saturday so I linked them to their recipes for you. I also listed the recipes at the bottom for two other of my meals this week.
Sunday: Chicken Marsala (with mushrooms and red peppers) over Angel Hair with Bread and Fruit
Monday: Turkey Kielbasa, Wild Rice and Steamed Broccoli
Tuesday: Warmed Sandwiches (see recipe below), Fruit and Chips
Wednesday: Popcorn Shrimp, Crab cakes (from a box), Tator Tots and Salad
Friday: Grilled-beef-braciole-with-grilled-tomato-basil-relish with Roasted Herb Rice a Roni and Bread
Saturday.... figuring it out still :)
Sunday: Slow Cooker BBQ Sandwiches :) Chips and Fruit
Herbed Chicken Tenderloins OR Chicken Marsala--call it what you like :)
A creation I came up with.... :)
NEED:
Chicken breasts (or tenderloins)--boneless skinless
olive oil
dried herbs of your choice
salt and pepper
sliced onions
sliced red peppers
sliced mushrooms
chicken broth
Red Cooking Wine (I used Burgundy; I have also used Red Marsala)
Dash of cornstarch
pat of butter
DO:
**heat a small swirl of olive oil in pan over medium-high heat
**sprinkle herbs over prepared chicken (cut off any "ickies")
**place in hot pan, sprinkle "Up side" with herbs, salt and pepper and cook about 5 minutes (should be browned)
**Flip and cook on other side until chicken is done.
**move chicken to plate and tent with foil to keep warm (might want to put on stove where it is warm but not cooking)
**add tiny bit more olive oil and onions/peppers saute for 5 minutes
**add mushrooms and saute 5 minutes more
**add about 1/2 cup of chicken broth and 1/2 cup wine (or just do all broth)---I did not measure :)
**use the wine and broth to loosen up all of the yummy "burnt" spots in the pan--scrape them up with wooden spoon and mix it all together
**turn heat up and reduce mixuture by at least half
**add your dash of cornstarch and mix (will thicken a little bit)
**should be a sauce but a bit thick. swirl in the pat of butter
**serve over chicken :)
if you do not like the veggies, omit or substitute :)
