saturday: DATE NIGHT! nothing like a late 9:30 pm dinner at Bone Fish Grill :)
sunday: chicken and turkey kielbasa kabobs, french bread, foxy lady potato salad
monday: stuffed french toast (cream cheese between the bread before you dip it), sausage/bacon, fruit
tuesday: t ball! chicken nuggets, salad, tator tots
wednesday: foil packets
thursday: grilled ham steak, baked potatoes, broccoli
friday: grilled pork tenderloin, wild rice, broccoli (pork marinaded in balsamic vinegar, olive oil, garlic and italian seasoning)

foxy lady potato salad
i am obsessed with fox point seasoning from penzy's spices--an amazing mixture of shallots, herbs and a tid bit of salt. SOOOOO TASTY. so today i created foxy lady potato salad. it tasted so sassy and had fox point in it so it needed a sassy name :)
NEED:
red skins
mayo
mustard
apple cider vinegar
fresh basil
fresh thyme
fox point seasoning
fresh chives
sour cream
DO:
boil potatoes until almost fork tender
set aside
in a bowl, mix mayo (about 3/4 cup), sour cream (about 1/4 cup), fox point seasoning (3 T?). Stir. Add splash of vi\negar. Then stir in finely chopped fresh basil, cut chives and finely chopped thyme.
quarter potatoes.
gently fold mixture into potatoes.
chil. enjoy :)
ALTERNATE mayo free version for Josh and his mom
Same as above but omit sour cream, vinegar and mayo. Instead add olive oil.
