thai peanut noodles adjusted

original:
Ingredients
  • 12 oz spaghetti (I used Barilla White Fiber)
  • 1 large red bell pepper, sliced into thin strips then cut into 2-inch pieces
  • 1 large cucumber, peeled, seeded and sliced into thin strips then cut into-2-inch pieces
  • 3/4 cup chopped green onions
  • 1/2 cup chopped cilantro
  • 1/2 cup lightly salted roasted peanuts, roughly chopped
  • Sesame seeds, for garnish (optional)
  • Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 Tbsp soy sauce
  • 2 Tbsp honey
  • 2 Tbsp Sriracha (more or less to taste)
  • 2 Tbsp fresh lime juice
  • 1 1/2 Tbsp peeled and minced fresh ginger
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
Directions
  • Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
  • Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly. Sprinkle with sesame seeds and serve.

I omitted the cucumbers and added julienne carrots. and i didn't measure the sauce stuff :) i think i had a lot more PB :)  and a LOT more siracha 

SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO tasty, fast and easy! i made the sauce the night before and kept in the fridge.

new recipe to try

Grilled Chicken Bruschetta
Gina's Weight Watcher Recipes 
Servings: 4 • Serving Size: 2 cutlets + tomatoes •  Old Points: 5 pts • Points+: 6
Calories: 237 • Fat: 8.5 g • Protein: 32 g • Carb: 7 g • Fiber: 1 g • Sugar: 0.5 g
Sodium: 182.9 mg (without the salt)

Ingredients:
  • 3 medium vine ripe tomatoes
  • 2 small cloves garlic, minced
  • 1/4 cup chopped red onion
  • 2 tbsp fresh basil leaves, chopped
  • 1 tbsp extra virgin oil
  • 1 tbsp balsamic vinegar
  • kosher salt and fresh cracked pepper to taste
  • 3 oz part skim mozzarella, diced
  • 1.25 lbs (8 thin sliced) chicken cutlets

Directions:

Combine onion, olive oil, balsamic, 1/4 tsp kosher salt and pepper. Set aside a few minutes.


Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional 1/8 tsp salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight. Toss in the cheese when ready to serve.


Season chicken with salt and fresh pepper. Preheat the grill to medium-high, clean and oil the grates to prevent sticking. Grill the chicken 2 minutes on each side, set aside on a platter and top with bruschetta and serve.

Rice Krispy Chicken:
chicken breasts
Butter
Salt/pepper
Dried Herbs (optional)

dip chicken in butter, coat with rice krispies, salt and pepper and drizzle with leftover butter (MMMMMMMMM) bake. 350 until done and kirspies are golden. Did I mention MMMMMMMMMMMMM
