in a whisper

J: hey mom, g said something bad to  k....

M: oh really? what was it?

J: when we had our picnic, you know not a birthday party or anything but the one that every one just got together for? the one where we played? well at that picnic, she told k that boys were stupid!

M: oh well that is not very nice is it? how do you know that she said that?

J: well k told me today on the bus.... at least he told it to me in (and he lowers his voice) {a whisper} so others didn't hear how naughty it was.

:) love that jack was sure to tell me that they talked about something {naughty} and were discreet about it :) at dinner that night, josh asked jack if he could give him some advice. josh told jack that girls tend to say things like that once you get to first grade so he should work on ignoring them when they call boys stupid :)

menu for the week

saturday: random dinner at the farm (baked potatoes, pb and nutella, etc)

sunday: herbed chicken (chicken marsala with no marsala wine), angel hair and salads

monday: grilled steak, baked potatoes, and fruit salad

tuesday: spicy tomato stew (see post from earlier), bread or muffins

wednesday: kielbasa, wild rice, a veggie

thursday: blts, chips

friday: tacos, cilantro lime rice, black beans simmered in red wine

Herbed Chicken Tenderloins OR Chicken Marsala--call it what you like :)
A creation I came up with.... :)
NEED:
Chicken breasts (or tenderloins)--boneless skinless
olive oil
dried herbs of your choice
salt and pepper
sliced onions
sliced red peppers
sliced mushrooms
chicken broth
Red Cooking Wine (I used Burgundy; I have also used Red Marsala)
Dash of cornstarch
pat of butter

DO:
**heat a small swirl of olive oil in pan over medium-high heat
**sprinkle herbs over prepared chicken (cut off any "ickies")
**place in hot pan, sprinkle "Up side" with herbs, salt and pepper and cook about 5 minutes (should be browned)
**Flip and cook on other side until chicken is done.
**move chicken to plate and tent with foil to keep warm (might want to put on stove where it is warm but not cooking)
**add tiny bit more olive oil and onions/peppers saute for 5 minutes
**add mushrooms and saute 5 minutes more
**add about 1/2 cup of chicken broth and 1/2 cup wine (or just do all broth)---I did not measure :)
**use the wine and broth to loosen up all of the yummy "burnt" spots in the pan--scrape them up with wooden spoon and mix it all together
**turn heat up and reduce mixuture by at least half
**add your dash of cornstarch and mix (will thicken a little bit)
**should be a sauce but a bit thick. swirl in the pat of butter
**serve over chicken :)
if you do not like the veggies, omit or substitute :)

accidental awesomeness

sometimes the best things i create are accidental--as in this morning. i was making my yummy spicy steak stew and it turned into something more on accident--follow below for this yummy tomatoey variation!

what i created is a "doubled" recipe as i will be freezing some so adjust as necessary

saute two packs of beef stew meat (salted and peppered) in olive oil until browned.
add chopped onion, chopped red pepper (can omit), and four large chopped fresh tomatoes.

stir and continue to cook over med-med/high.

add a few minced garlic cloves, cayenne pepper to taste, red wine, and worteshire sauce. (you know i don't measure....so if i had to eye ball it..... 1 cup red wine, 1/4 cup worteshire sauce). add more pepper, some thyme, parsley flakes and i also added green goddess dressing seasoning (penzey's spices--garlic, sugar, basil, dill, green onion, etc.)

stir and let simmer for a while. then add beef broth and lots of diced potatoes and  BIG can of crushed tomatoes (these was my SUPER secret accidental addition.....thought they were chopped tomatoes).  let simmer. mine didn't have enough "broth" so i added more wine (....yeah...) and more beef broth.

you can eat it as it (soup) or combine cold water with cornstarch, stir in and it will thicken into stew.

i have tasted this creation already this morning (started making it 2.5 hours ago) and it is AMAZING! we will be having it for dinner later this week..... tastes best when it sits :)

lights on

tonight as i put him to bed, he mentions that we have a lot of lights in our house. i agree. he looks at me and smiles as he says, well if we turn them all on then it is like the lights are having a party! then he says if we turn them all off, they are like the movie theatre :)

he likes his lights to have a party at night so he is less scared but he LOVES them dark in the day so he can pretend he is at the movie theatre!

make up

i stumbled upon something today that made me pause--an article on lady gaga and a photo shoot that was done for harper's bazaar. in her interview she shared that her fans always expect her to have something unexpected..... for purposes of history when in a gazillion years someone reads this, lady gaga is extreme. she wears crazy make up, changes her hair color, wears odd clothing--including a dress made of raw meat--and is "born this way". well for the shoot she went "natural" and the photo shoot byline told you how to get this "natural" look by ADDING MAKE UP. seriously people! what is wrong with our society! we do NOT need to add MAKE UP to be natural nor do we need make up to be gorgeous! in the article lady gaga said that she does not "put her self on every day" and does not need to have make up on as it is what is inside what counts....why then did she allow make up for the photo shoot to show her natural self?

for what it is worth, here is what i think:
make up is like "sparkles" or "bling"--when added in moderation, it can be beautiful and help yourself shine through. however, you are gorgeous without added sparkles and bling so ladies, let's be proud of who we are and be gorgeous just as ourselves!

gas?

as jack and i lovingly laid on a blanket under the stars last night, we chatted about the universe, space and the constellations we could see. i reminisced with him about the scene in the lion king where simba is told of the kings from long ago who look down at him and guide him. jack smiled and proceeded to share with me that he knows stars are really balls of gas but he has decided that the gas is really an angel's fart! oh that child! :)

Firsts

this weekend was a weekend of FIRSTS--all kinds :)

**first night tenting it in the backyard--josh squeezed himself and the boys into the little pup tent :)

**first campfire in our backyard LATE--it was pretty darn late for our boys as they climbed into the tent close to 9:20 pm

**first time working at school on a sunday..... yeah it was absolutely necessary

**first time holding AyoDele Michael at his house--he is 5 days old and gorgeous :)

**first time freezing corn--i bought a LOT of corn on the cob for a neighborhood bbq (see below) and had a LOT left over...so i blanched it, cut it and froze it.

**first neighborhood bbq with the power out--that is right folks, we lost our power and still held our neighborhood bbq. it was our 2nd annual but first ever with no power! we had way fun and the power was back on by the time we got home! :)

**first time putting max on her "buzz" collar.....she does not like it but she certainly has started to listen better with small amount of training :)

**first time we had a date in rockford :) josh and i took off on friday night, wandered around rockford and then had dinner in gr at bonefish grille! sooooooo yummy :)
