mmmmmmmmmmmm

Rice Krispy Chicken:
chicken breasts
Butter
Salt/pepper
Dried Herbs (optional)

dip chicken in butter, coat with rice krispies, salt and pepper and drizzle with leftover butter (MMMMMMMMM) bake. 350 until done and kirspies are golden. Did I mention MMMMMMMMMMMMM

menu

the weekend was fast....and meals changed so i will back up :)

friday: mad dogz in comstock part with my sis :) and the boys

saturday: rice krispy chicken, roasted broccoli and asparagus (see below), mashed potatoes, bread with oil

sunday: farm (round steak in the crock pot, roasted potatoes, peas and hot biscuits with honey)

monday: taking my boyer family out

tuesday: leftovers (rice krispy chicken)

wednesday:  spaghetti (frozen sauce that i made) and steamed broccoli with herbed butter

thursday: josh make dinner for boys if i shop..... :)

friday: chicken patty sandwiches, chips and fruit

saturday: josh gone............ take boys out?

sunday: meijer broasted chicken

monday: tacos

tuesday: french toast and bacon



roasted broccoli and asparagus
NEED:
asparagus (broken in halves)
broccoli (cut into bite sized pieces)
olive oil (i used seasoned oil--herbs de provence--old world olive)
salt (kosher)
fresh ground pepper

DO:
toss all together and roast on a pan at 500 degrees until "browned" and yummy

rice krispy chicken:
NEED:
thin breasts (or halved breasts)
butter
salt
pepper
italian herbs
rice krispies

DO:
dip breasts in butter, then rice krispies. place on foiled pan. sprinkle with herbs, salt and pepper. drizzle with lefter over butter.

bake 400 degrees until done and krispies are brown (20-30 minutes)

rice krispy chicken

NEED
chicken breasts (i like to slice my thin)
herbs (optional)
rice krispies
butter
salt
pepper

DO
dip breasts in butter
dip breasts in krispies
place on a "pam coated" foil lined tray (trust me the foil is well worth the effort)
sprinkle with salt and pepper
drizzle a little more butter on (worth the extra calories... mmmmmmmmmm)
bake 400 degrees until chicken done. watch so krispies do not burn.

monday: leftover tacos from dustin's open house

tuesday: homemade pizza on prebaked crusts, fruit

wednesday: rice krispy chicken, aparagus and rice

thursday: warmed sandwiches, chips and fruit

friday: spaghetti

saturday: want a date night SOOOOOOOOOO badly............ but alas probably having roasted pork tenderloins, roasted potatoes and broccoli

sunday: kielbasa, wild rice and applesauce

monday: burgers?

it's the small things....

........ like adding herbs :)

tonight i made rice krispy chicken. while the chicken thawed, i added fresh chopped herbs (rosemary and thyme from my garden) to the bag. that's it. nothing else. that made a HUGE difference in the flavor of the chicken--it was wonderfully herby!

NEED
chicken breasts (i like to slice my thin)

butter

meals for the week

saturday: chilli dogs, chips, applesauce (and tasty)

sunday: barley mushroom soup (recipe below)--new one! MMMMMMMMMM

monday: Rice Krispie Chicken

tuesday: tb works an entire day--enchailadas ready to throw in the oven,  tortilla chips and guac (ham for boys)

wednesday: jack turns 7! his pick!

thursday: ribs, baked potatoes, salad

friday:  out (appointment for Jack-O)

saturday: Kielbasa, wild rice and fruit

sunday: jack's birthday party


barley mushroom soup

NEED:
mushrooms (at least 16 oz)
carrots (diced...1 cup or so)
celery  (diced...1 cup or so)
onion (diced...1 cup or so)
garlic (some)
shallots (my addition)
broth (four cups)
white wine (my addition)
salt
pepper
water
beef boulion (the good stuff)
tomato paste (3 TBSP)
butter (1 TBSP)

quick cook barley

DO:
saute carrots, celery, and onion in butter (3 min)
add mushrooms, shallots and garlic. three more min of medium high
add 1/2 cup of wine..... or so.... and drink 2 glasses
simmer a few more minutes
add tomato paste, 1 cup water, 2 "spoons" of beef boulion base, and the veggie broth
bring to boil
add 1 cup barley

boil until barley is consistency you like.

Rice Krispy Chicken

NEED:
chicken breasts (i like to flatten my out a bit)
butter (to dip breasts in)
rice kripies

DO:
dip breasts in butter
dip into rice kripies
 put onto a tin foil covered sheet that has been "pammed"

bake until done

MMMMMMMMMMMMMMMMMMMMM
