menu

for the week.....

sunday: myo (make your own)
monday: smothered chicken, bread, baked potatoes
tuesday: pork carnitas, chips, guac
wednesday: kilebasa, wild rice, salad
thursday: myo/breakfast




Pork Carnitas:

Served on toasted soft corn tortillas with avacado, jalapenos, and red onion! :)

2 pounds pork shoulder
1/2cup freshly squeezed orange juice (about 1 large orange)
1/4cup freshly squeezed lime juice (about 1 large lime)
7cloves garlic (whole intact)
1/2tablespoon kosher salt
1tablespoon cumin
1/2cup beef broth
corn  tortillas    sourcream, salsa, sliced avocado (optional)

The Directions.
Usea 6 quart slow cooker. In a small bowl, combine the salt and cumin.Rub mixture all over the pork, then plop into the slow cooker. Add whole garlic cloves. Squeeze on the citrus, and pour the beef broth evenly over the top.
Cook on low for 8-10 hours, or until the pork shreds quite easily with a fork. If your meat is still fully intact after 8 hours, remove and cut into chunks, then return to the crock and flip to high for about an hour or two.Shred meat fully and serve on warmed corn tortillas with desired toppings.

NEED:
chicken breasts
Veggies (such as peppers/onions/mushrooms)
Cheese (pepper jack is our fave)
herbs or marinade (thinking tequila and lime juice this time)

DO:
Marinade/season chicken breasts while that sits.... cook the veggies in a frying pan until done to your liking (I like ours crisp)
Put veggies aside and cook chicken in the same pan until done--try to turn only once and don't let the chicken touch each other (chicken will brown better)
when chicken is done, put the veggies on top of the chicken, add cheese and let melt (can also put in a warm oven to let melt quickly)
Serve :)

best prom ever! over 400 guests... over 200 volunteers..... the high school was rocking! oh what fun and such a meaningful experience!!!!

oh we love the neighbors :) bowling and dinner out on one of the MANY snow days..... :D

did you participate in odessey of the mind when you were a kid? i did :) and now my kids did too! i am super proud of jack and luke-they joined OM "blind" (without specific team to join)--they were placed on a team with 5 other kids......... all fifth grade GIRLS! OH my! :) grandma linda was a co-coach for the team. they participated the the problem "seeing is believing". it was a bit of a rough road at first but by the time it was to compete, they were all set and rocking it! they showed the audience how good it was to be clean and environmentally friendly :) jack and luke were both "clean" guys AND under water....something something...dinosaurs! what a joy it was to watch the boys compete--they grew so much with creativity, team work, spontaneity, etc. i can't wait to see what they come up with next year!
waiting for scores! kids came in 7 out of 10 teams--excellent job for a first year!!

long story.......



long story short.......... about a bazillion times i promised the boys for home made cinnamon rolls on a snow day............ well a bazillion (literally) snow days later, the boys get their tasty treats. oh what a lot of work but mmmmmmmmmmmm

we enjoyed a lovely dinner at bostwick lake inn with all of us, then a short game of skip bo after aunt sarah, uncle aaron, owen and addie went home. at the end grammie read luke the book she wrote the grandkids for christmas. such a special day ;)

oh i heart this soup and i am working to continue to grow it!!!!!!! mmmmmmmmm


what i started with:
shrimp (raw and cleaned)
broth (i used a "box" of chicken)
chopped onion
chopped poblano pepper
diced garlic
red pepper flakes or cayenne pepper
lime juice
northern beans
corn (frozen will work but i used fresh corn cut off the cob)

DO:
sautee veggies in a bit of olive oil. add beans. add corn. sautee a bit longer. add seaoning and salt. add broth. add shrimp. cook until shrimp are done. (pink--three to four minutes)

serve in shallow bowl with tortilla strips or crushed tortilla chips and avacado chunks. mmmmmmmmmmmmmm


what  i did...........

add a can of diced tomatoes
left the peppers and onions big
added cumin (lots)
extra fresh cilantro
some chili powder (a dash)
added some red pepper flakes
