meals for the week

monday: burger,  salad, tomatoes from garden (?), tator tots
tuesday: make your own wrap/pita, chips, fruit or leftover tomatoes
wednesday: french dip sandwiches, marinaded tomatoes and chips 
thursday: pancakes, bacon and fruit
friday: steaks, green beans, baked potatoes, bread
saturday: tj bday and mom has a play to go to

one again a perfect dinner

This recipe is amazing and continues to be a huge hit! We had mom and dad boyer over for dinner and everyone loved it!

Chicken and Mushrooms in a Garlic White Wine Sauce
Gina's Weight Watcher Recipes 
Servings: 4 • Serving Size: divide between 4 • Old Points: 4 pts • Points+: 6 pts
Calories: 169 • Fat: 5.5 g • Protein: 22.8 g • Carb: 4.9 g • Fiber: 1.2 g • Sugar: 1.7 g 




Ingredients:

  • 8 chicken tenderloins, 16 oz total
  • 2 tsp butter
  • 2 tsp olive oil
  • 1/4 cup all purpose flour* (use rice flour if gluten free)
  • 3-4 cloves garlic, minced
  • 12 oz sliced mushrooms
  • 1/4 cup white wine
  • 1/3 cup fat free chicken broth
  • salt and fresh pepper to taste
  • 1/4 cup chopped fresh parsley

Directions: 
    Preheat oven to 200°. Season chicken with salt and pepper. Lightly dredge in flour. 

    Heat a large skillet on medium heat; when hot add 1 tsp butter and 1 tsp olive oil. Addchicken to the skillet and cook on medium heat for about 5 minutes on each side, or until chicken is no longer pink. Set aside in a warm oven.

    Add additional oil and butter to the skillet, then garlic and cook a few seconds; addmushrooms, salt and pepper stirring occasionally until golden, about 5 minutes.

    Add wine, chicken broth, parsley; stir the pan with a wooden spoon breaking up any brown bits from the bottom of the pan. Cook a few more minutes or until the liquid reduces by half. Top the chicken with the mushroom sauce and serve.

    *I only used 1 tbsp of flour and tossed the rest, so calculations were for 1 tbsp flour only.

    french dip

    Ingredients
    • 1 medium yellow onion
    • 2 cups beef broth
    • 1/4 cup soy sauce
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon dijon mustard
    • 3 cloves garlic, minced
    • 3-4 peppercorns
    • 1 bay leaf
    • 1 teaspoon dried thyme
    • salt to taste
    • 3lb boneless beef bottom roast
    Directions
    1. Slice the onion into 1/4" rings and layer the bottom of the crock pot.
    2. Trim the roast of visible fat, then salt both sides of the roast. Place on top of the onions. 
    3. Add the remaining ingredients to the slow cooker, pouring the broth and soy sauce over the beef. If the roast isn't covered, add enough water to almost cover the meat in liquid.
    4. Cover and cook on high for 4-6 hours or low 10-12 hours. Remove the meat from the liquid. Let stand 5 minutes before slicing thinly across the grain.
    5. Serve the meat in a sandwich with a small cup of the au jus to the side.
    6. Enjoy!

    end of hockey chuckee cheese event that i planned with money we earned from ticket sales

    girls weekend

    tonya, fran, melissa and i took a girl's weekend to ikea, crossroads's mall and the tanger outlet. it was FUN!
    highlights: lots of panera, too much laughter, a blueberry pancake shot with melissa, filling a van with ikea finds, taking melissa on her first trip to ikea!!!!! oh and i ate at hooters for the first time :D
